Scottish Shortbread Cookies
Recently a friend of our sent us a box of Heritage Scottish shortbread cookies. We absolutely loved them! We loved them so much that we had to figure out how to make them ourselves.

It turns out that traditional Scottish shortbread cookies have only 3 ingredients and are pretty simple to make. Just butter, flour and sugar. The recipe I have below uses brown sugar which gives them great flavor and texture. You can add some other flavors to these like candied ginger, etc.
I like them just simple. They remind me of my favorite Girl Scout cookies, trefoils. They are great on their own or with a cup of coffee or tea. My dad always loved them with a cup of coffee.
You can also cut them out into any shape you want, use a cookie cutter or press. I decided to just cut simple rectangles and make indentations with the tines of a fork.

Scottish Shortbread Cookies
Ingredients
- 1 cup butter softened
- 1/2 cup brown sugar packed
- 2 1/4 cup all purpose flour
Instructions
- Preheat oven to 325 degrees F
- Cream butter and brown sugar
- Add 2 cups flour, mix well
- Sprinkle board with the remaining flour. Knead dough for 2 minutes, adding enough flour to make a soft dough. Roll to 1/2 inch thickness. cut into 2×3 inch rectangles, prick with fork and place on ungreased baking sheet
- Bake at 325 degrees F for 20 to 25 minutes
